I love kale. I love it for its beefy texture and earthy green taste. It's also really good for you. Here's a simple way to prepare it:
bunch of kale - any kind
2-3 TB olive oil (couple of splashes)
1-2 garlic cloves (1 fatty garlic clove or 2 smallish ones)
1/2 cup water or veggie broth
red wine vinegar
salt
pepper
parmigiano reggiano
Trim the kale: cut out and compost or discard the thick middle stem, i.e., make a swipe with your knife down either side of the stem. Chop the kale into strips. I like to role up the long leaf halves and chop them that way.
Peel and thinly slice your garlic. I love it when I don't have to mince the garlic.
Heat your olive oil in a deepish skillet over medium heat.
Add the garlic and cook gently for about a minute until it feels soft beneath your spatula. Try not to let it brown. (Do you have a nice, simple wooden spatula for your savory cooking? I love my wooden spatula. My brother gave it to me, and it's my kitchen friend.)
Add the kale (exciting!) and the water or broth, toss a bit, turn up the heat, cover and cook for about 5 minutes.
Uncover and cook off any remaining liquid - maybe another minute.
Add a baby splash of red wine vinegar (1-2 tsp) and a little salt and pepper, and toss.
Serve hot with a bit of grated parm-regg on top if you like.
I would say this serves 1-2 people, but I'm a kale piggy, so maybe you could get 3 servings out of it? Depending on how much you like kale? Try it!
